Snack Time: Homemade No Dairy No Soy Popcorn

UPDATE: Please make sure to double check ingredients each time you buy. I hope I never overlook anything but it’s possible and ingredients can change. A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.

Making homemade popcorn is super easy, cheap, and very good. All you need are 3 ingredients. Popcorn (found by microwave popcorn in large bags), coconut oil (yes this magical oil makes your popcorn taste buttery without butter), and sea salt. You will also need a tall pot with lid (or paper lunch bag if you wish to use the microwave) and bowl to eat out of. I have only done the stovetop version so not sure on times for the microwave version. The stovetop takes about 5 minutes.

First melt around 4 large spoonfuls of coconut oil in pot.

*Beauty Tip: Any coconut oil you get on your hands scraping it off into the pot just rub it in, it makes a fantastic moisturizer. Then just pat hands off with a towel.

Next turn heat on stovetop up to medium high to high and put in a cup of popcorn. Shake corn around to make sure coconut oil covers all corn. If you need to add more oil do it now quickly. You want the corn covered.

Place lid on and wait for popping.

Once it slows down to only a pop every few seconds dump popcorn in a bowl and salt to taste.

That's all there is to it. Now you have a quick, easy, healthy, tasty no dairy/soy snack. Go enjoy!

Side Note: Not sure how but I think the popcorn taste even better the 2nd day. Maybe the salt and coconut oil soaks in more. So if you have leftovers try it the 2nd day before you toss it out.
