Leftover Makeover: Baked Salmon Salad






UPDATE: Please make sure to double check ingredients each time you buy. I hope I never overlook anything but it’s possible and ingredients can change. A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.


Most people are short on time and money, so I thought I would do a leftover makeover for today's post. This post takes yesterday's grilled salmon and turns it into a salad for today's lunch.

All you need is your favorite salad ingredients. I used: garden mixed bag salad, tomatoes, red onions, salmon, and Hidden Valley Farmhouse Italian Dressing (just check your dressing for soy).





I just put together the salad and reheated the salmon for 45 seconds. That's all there is to it. You have a fast, healthy, delicious lunch and you're savings money by using leftovers.





This also works great with leftover chicken. Eating easy fast foods does not have to be unhealthy. Leftovers are a great way to save money & time while still eating healthy.
