Dairy Free Soy Free Homemade Biscuits





Here is an easy recipe for homemade biscuits. We eat them with everything from jelly, sausage, and bacon to fried chicken. For the fried chicken I use my wing recipe just without the sauce (just the breading). Just cut your chicken into thin cutlets instead of wing shapes. Here's the recipe Dairy Soy Free Fried Chicken

I also make them with the dairy soy free buttery spread on top.










Dairy Soy Free Biscuits

Ingredients:








Pam for Grilling Cooking Spray or Non Stick Foil

2 Cups Self-Rising Flour

1/2 Cups Spectrum Dairy Soy Free Shortening or Lard (I might even use more, I eye it)

2/3 to 3/4 Cups Water (I use 3/4)

*Optional: Earth's Balance No Dairy No Soy Buttery Spread

Instructions:

1. Heat oven to 500°F. Coat baking sheet with no-stick cooking spray or foil.

2. Measure flour into large bowl. Cut in shortening with pastry blender or 2 knives until crumbs are the size of peas. Blend in just enough water with fork until dough leaves sides of bowl.









3.Turn dough onto lightly floured surface. Knead gently 2 to 3 times. Roll dough to 1/2-inch thickness. Cut using floured 2-inch biscuit cutter. Place on prepared baking sheet 1 inch apart for crisp sides or almost touching for soft sides.













4. Bake 8 to 10 minutes or until golden brown.




*Optional: Melt buttery spread in microwave and at the end of cook time for biscuits brush on butter. Put back in oven on broil for 2 minutes. Keep your eye on them they burn fast!

*If you use All-Purpose Flour: Combine 2 cups flour, 1 tablespoon baking powder and 1 teaspoon salt before cutting in shortening. Follow directions above.

Dairy Free Soy Free Garlic Crusted Chicken & Mashed Potatoes






UPDATE: Please make sure to double check ingredients each time you buy. I hope I never overlook anything but it’s possible and ingredients can change. A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.




Dairy Free Soy Free Garlic Crusted Chicken & Mashed Potatoes

This chicken came out juicy and delicious!

Ingredients:




2 eggs, beaten

1 cup Panko Bread Crumbs (I use Emeril's Original, check your ingredients for dairy & soy)

1/2 teaspoon garlic salt

ground black pepper to taste

4 skinless, boneless chicken breast halves

1/2 cup butter, cut into pieces (I use dairy & soy free Earth's Balance Buttery Spread)


Directions:

Preheat oven to 375 degrees F (190 degrees C).

Place eggs and Panko crumbs in two separate shallow bowls.
Mix panko crumbs with garlic salt and pepper.
Dip chicken in the eggs, then dredge in the crumb mixture to coat.






Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.






Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.

*If you use a glass baking dish read all care instructions, and never broil food in them or place on cold surface out of hot oven.

Dairy Free Soy Free Mashed Potatoes

Ingredients:




8 potatoes, peeled and quartered
1/2 cup coconut milk
1/4 cup coconut oil or Dairy Soy Free Earths Balance Buttery Spread
2 cloves garlic, minced (optional)
salt to taste
1 pinch ground pepper
2 tablespoons green onions, chopped (optional)

Directions:

Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes.




Drain, and place in a large bowl.

Combine potatoes with coconut milk, coconut oil (or buttery spread), garlic (optional), salt, and pepper.






Mash with a potato masher to your desired consistency. Sprinkle with chopped green onions (optional).
