Dairy Free Soy Free Homemade Chicken Noodle Soup

A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.




Yesterday we got a surprise snow day.



In honor of the snow day (and my allergies/cold), I really wanted chicken noodle soup. Since I cannot find a canned dairy soy free version, I experimented with making the soup from scratch. I pieced together my recipe from different recipes I reviewed. For my first attempt at homemade chicken noodle soup I think it turned out pretty good. Since much of the country is in a winter storm right now homemade soup is perfect. Use whatever vegetables you have handy. I used a mix of frozen and fresh because I did not want to go to the store, and it's what I had. As always check your ingredients (even some broths have soy).

Homemade Chicken Noodle Soup

Ingredients:




2-3 pounds chicken (I used boneless skinless breast I cut into cubes, you can use whatever kind you want)
1 Quart (32 Ounces) Chicken Broth (I used Progresso)
2 Quarts Water
1/4 teaspoons Dried Marjoram
1/4 teaspoons Dried Thyme
3 teaspoons sea salt
1/2 tablespoons pepper
Vegetables (I used frozen carrots, fresh zucchini & yellow squash, and yellow onions)
Noodles (I used Spaghetti noodles, but you can use your favorite)

Instructions:

Combine chicken broth, water, chicken, and seasoning in large pot and bring to a boil. Reduce to a simmer and skim off top of soup. Cover and cook for an hour.






Skim off top. Check chicken for tenderness after an hour. If you used bone in chicken remove chicken and take off bone. Put back in pot. Add vegetables and cook another hour.






Add noodles. Bring back up to a boil for about 3 minutes (make sure all noodles are submerged). Lower to a simmer and cover for 30 minutes.




Add additional salt and pepper to taste.

Dairy Free Soy Free Chocolate Covered Peanuts & Chocolate Covered Raisins

A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.




This is a super easy way to make dairy & soy free chocolate covered peanuts and chocolate covered raisins.

Ingredients:




Peanuts
Raisins
Enjoy Life Chocolate Chunks (or mini chips)

Directions:

Get a microwave safe medium sized bowl. Pour half the chocolate in it and microwave for 3:00 minutes on 50% power (since microwaves vary, you might want to start with 1 minute and work up so you don't burn the chocolate). *Be careful with the bowl it will be hot, use a dish towel or oven mits.









Stir up chocolate with spoon. If it is melted then add peanuts until you are happy with the ratio. I use about a cup of peanuts for a half bag of chocolate.












Then scoop out small rounds onto nonstick foil. Let dry (about an hour).









Then take the other half of the chocolate and repeat steps with raisins.












Warning these are addictive. They also make great gifts.

Happy New Year



2013 was a busy, fun, & crazy year for my family. We finally hit a good stride with the dairy soy free life, Annabel grew like crazy and hit a ton of milestones, and I feel like we are settling into our life as a family of three now.

I took all of December off the blog posts because the holidays are a busy time, and  I'm slowing down on ideas for new recipes. So if you have any ideas or questions about recipes, foods, or making something dairy and soy free please leave me a comment, and I will try to post an answer. For now I will probably only be posting once a week, but I will check comments and questions everyday.
