Dairy Free Soy Free Chocolate Chunk Peanut Butter and Oatmeal Cookies









UPDATE: Please make sure to double check ingredients each time you buy. I hope I never overlook anything but it’s possible and ingredients can change. A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.


Dairy Free Soy Free Chocolate Chunk Peanut Butter and Oatmeal Cookies

These are extremely delicious cookies. So be warned you might not be able to stop eating them.

Dairy Free Soy Free Chocolate Chunk Peanut Butter and Oatmeal Cookies

Yields: 3-4 Dozen Cookies




Ingrediants:

1 cup coconut oil (or butter if you're not dairy soy free)
1 cup creamy peanut butter (I use Peter Pan 100% Natural, check your brand for soy)
1 cup packed light brown sugar
1 cup granulated sugar
1 teaspoon vanilla
2 large eggs
2 cups all-purpose flour
1 cup quick rolled oats
2 teaspoons baking powder
1 teaspoon salt
1 bag Enjoy Life Chocolate Chunks (or any brand if you're not dairy soy free)

Directions:

Preheat oven to 350 degrees F.

In a large bowl with an electric handheld mixer or in the bowl of a stand mixer, cream together the coconut oil, peanut butter, brown sugar and granulated sugar.






Add the vanilla and eggs and mix until the batter is light in color, 2-3 minutes.






In separate bowl combine the flour, oatmeal, baking powder, and salt.






Mix in the flour mixture (a little at a time) with the wet ingredients.






When it is mostly combined but there are still dry spots, add the chocolate chips and mix until well combined (by hand not with mixer).






Scoop out tablespoon-sized balls of dough onto an ungreased cookie sheet, spacing the cookies 1-2 inches apart. I like to use a cookie scoop.






Bake for 10-12 minutes until very lightly browned and still soft in the center.





Let sit 2 minutes on cookie sheet then remove the cookies to a cooling rack to cool completely.

Even before I had to start cooking for food allergies, I always put oatmeal in my chocolate chip cookies for the same reason BUT I actually throw my oats in a blender first so they are a fine powder (like flour). People that don't want a "healthy" cookie never even notice the oatmeal. My mom used to do the same thing with a little bit of wheat germ as well =)
