What's for Dinner: Dairy Free Soy Free Pizza








UPDATE: Please make sure to double check ingredients each time you buy. I hope I never overlook anything but it’s possible and ingredients can change. A lot of my posts are over two years old and since I have gone back dairy soy free I have discovered a few items I use to buy all the time that now have soy in them.


We have a guest blogger today, my husband. My husband is the pizza maker in the house, so I thought it would be best if he wrote this blog and took the pictures. This is wonderful dairy soy free pizza. We do not use cheese, but I think there are dairy soy free cheeses out there. I have never seen or tried them. By putting a top crust on the pizza you really do not miss the cheese. You can use whatever toppings you like on your pizza as long as they are dairy soy free.

Dairy Free Soy Free Pizza

Ingredients (makes one 10" pizza if you use the 3 crusts):

All purpose flour 1-3/4 to 2-1/4 cups
1 envelope yeast (we use Fleishman Pizza Yeast)
1-1/2 teaspoons sugar
3/4 teaspoons salt
2/3 cup very warm water
3 tablespoons oil (we use coconut oil)
Pam for Grilling Spray

Pizza Sauce (we use Boboli or Classico)

Toppings of your choice

*You can use most yeasts, but it does make a difference. I haven't found any I've liked better than Fleishman Pizza Yeast.

Directions:
These have been slightly modified from the direction on the Fleishman Pizza Yeast pack. You should be able to find theirs & more at www.pizzacrustyeast.com

Preheat oven to 425 degrees Fahrenheit

Combine 1 cup flour, undissolved yeast, sugar, & salt in a large bowl. You can feel free to add a little garlic & Italian seasoning if you wish. Now add water & oil. Mix until well blended (roughly 1 minute). Don't worry if it looks runny.






Add gradually, enough flour until soft dough ball is formed. Dough will be sticky.






Knead on a floured surface adding additional flour if needed, until smooth & elastic (roughly 4 minutes). Split dough ball into 3 sections;  1 slightly larger than the other 2.

With floured hands, pat larger dough section out to fit sprayed spring form pan (I won't do pizza without one. Also, check ingredients of spray, many contain soy. We use Pam for Grilling). Leave a little bit of a lip at edge to mesh with next 2 layers.










Add a layer of pizza sauce & your choice of toppings (You will have another layer so don't go overboard. I normally do onions & peppers in 1st layer).







With floured hands, pat another dough section out to fit pan (It's ok if it's a little smaller). Lay over sauce & toppings. Go ahead & lightly press dough into toppings.




Add another layer of pizza sauce & your choice of toppings (This is when I normally add pepperoni,  banana peppers, & pineapple in addition to more onions & peppers).







With floured hands, pat the last dough section out to fit pan (slightly larger is preferable). Lay over sauce & toppings. Press down on edges to mesh edges of dough together & secure sauce & toppings inside.







Optional. I brush some heated coconut oil on top layer then add pepperoni. This gives the top a flakey buttery taste (like a buttery biscuit). I do pepperoni on top because my wife loves to pick off the crispy pepperoni to eat first.






Bake on bottom oven rack for about 15-20 minutes (until top looks slightly golden brown). Switch to high broil for 1-2 minutes (this will finish the golden brown look & give you that crisp pepperoni most people enjoy).

Carefully remove from oven & set on heat safe surface. Release latch & remove side of spring form pan. Enjoy your meal.














**For presentation purposes, it looks better if you cut each slice individually like a pie instead of all at once like traditional pizza.
